Nidhi's Keto Kitchen: Broccoli Rice

Ingredients:

  • Broccoli 2 lb head

  • Oil 2 tsp

  • Salt 1 ½ tsp

  • Garlic Finely Chopped 1 tsp

  • Ground pepper powder ½ tsp

  • Fresh lime juice 1 tbsp (1 Lime)

  • Cilantro(Coriander) ¼ cup finely chopped



Prepartion:

  1. To make broccoli rice, add broccoli florets to a food processor (not overcrowding it) and process until rice texture. You can use fresh or frozen store-bought just please don’t thaw it.

  2. In a big flat pan add 2 tsp oil add cumin seeds to it, add garlic and saute for 30 secs, don't let the garlic burn.

  3. Now add the riced broccoli (fresh or frozen) and stir it for 2 to 3 mins on high flame.

  4. Now add salt, pepper & fresh lime juice and cilantro and mix everything well. Make sure you don’t overcook it and make it mushy.

  5. Serve it hot with a keto-curry or kebabs.


Tips:

For a variation you can add onions after garlic and saute them till they turn transparent, after that rest of the process is same from step 3.

If you are using a frozen broccoli rice then don’t thaw as it will cook the rice and make it mushy texture when you add them in pan. Just cook for 2 to 3 mins extra in the pan itself.
