Okra (Bhindi) 2 lbs
Onions 1/2 cups cut into 1" cubes
Tomatoes roughly cut in 1/2 cubes
Turmeric 1/2 tsp
Salt 1 tsp
Mustard oil 3 tsp
Red chilly powder 1/2 tsp
Lemon juice of 1 tbsp
2 to 3 Green Chilies (cut in half) you can control your heat with these, don't add them if you want to keep the heat low.
Thoroughly wash okra and spread it on a paper towel so it becomes absolutely dry. If there is any water/moisture left then it gets a lacy texture, so make sure it is nicely dry. When it is dry cut the crowns and throw them away, and slice the rest in 1/2" size circles.
Heat your air fryer, add cut okra, turmeric, salt and half of the oil. Let it fry for 15 to 20 mins till it becomes half the size.
Now in a deep pan add rest of the oil and add onions and cut green chilies, saute till onions become transparent.
Add tomatoes and cook till they become a little soft, we don't want to make them completely mushy.
Now add the fried okra, lemon juice and coriander mix it well. Let it cook for 3 to 4 minutes and turn the heat off. Serve it hot.
