Looking for Vegetarian Keto Recipe, here is Cottage Cheese with green pepper, onion and tomatoes.

Ingredients:
Cottage cheese 14 oz cut in 1 inch cubes
Green peppers 2 cups cut in 1 inch squares
Onions 1 cup cut in 1 inch squares
Tomatoes 1 cup cut in 1 inch squares
Salt 1 tsp
Turmeric powder 1/2 tsp
Red chili powder 1/2 tsp (this is optional and you can adjust as per your taste)
Lemon Juice 1 tbsp
Olive oil 2 tsp
Fresh coriander for garnish
Preparation:
Heat a wok, and add oil and add onions in the hot oil, stir fry for 1 mins on high flame.
Add salt and turmeric and stir fry for 1 mins, now add green peppers keep stirring frequently and you can bring the flame to medium high. Cook peppers for 3 mins and add paneer (cottage cheese). Keep stirring occasionally slowly and gently as paneer can break in small pieces if stirred vigorously.
After a 2 to 3 mins add tomatoes, stir once or twice and then cover the lid and let it stay for 2 mins. Stir once more and then close the lid again for 2 more minutes.
Now sprinkle chili powder and stir well, turn off the heat and add lemon juice and coriander and stir one last time. Serve it hot.
