Nidhi's Keto Kitchen: Zoodles


Ingredients:

For Basil & Spinach Pesto:

  • Baby Spinach 1 cup

  • Fresh Basil 1 cup

  • Garlic cloves 3

  • Pine nuts 1 tbsp (optional for people on low fat keto diet)

  • Olive Oil 4 tsp

  • Parmesan 1 tbsp

  • Salt 1 tsp

  • black pepper ground 1 tsp

For your Pesto add all the ingredients in a food processor and make a course paste. This is good for two portions sizes


For Zoodles:

  • Zucchini 3 medium size spiraled

  • Garlic chopped 1 tbsp

  • Butter 1/2 tsp

  • Salt 1/2 tsp


Recipe:


  1. Add Butter in a Pan and add chopped garlic.

  2. Add spiraled zucchini and stir for 3 to 4 mins (you can cover the lid if you like your softer zucchini)

  3. Add salt and cook for 1 more min.

  4. Add 1/2 of the above pesto paste & mix it gently. Try not to break or crush the zoodles.

  5. Garnish with cilantro and enjoy it hot.
