Ingredients:
For Basil & Spinach Pesto:
Baby Spinach 1 cup
Fresh Basil 1 cup
Garlic cloves 3
Pine nuts 1 tbsp (optional for people on low fat keto diet)
Olive Oil 4 tsp
Parmesan 1 tbsp
Salt 1 tsp
black pepper ground 1 tsp
For your Pesto add all the ingredients in a food processor and make a course paste. This is good for two portions sizes
For Zoodles:
Zucchini 3 medium size spiraled
Garlic chopped 1 tbsp
Butter 1/2 tsp
Salt 1/2 tsp
Recipe:
Add Butter in a Pan and add chopped garlic.
Add spiraled zucchini and stir for 3 to 4 mins (you can cover the lid if you like your softer zucchini)
Add salt and cook for 1 more min.
Add 1/2 of the above pesto paste & mix it gently. Try not to break or crush the zoodles.
Garnish with cilantro and enjoy it hot.
