Ingredients:
● 1 bell pepper, chopped and cored
● Vegetable oil or non stick cooking spray
● 4 eggs
● Freshly chopped parsley, for garnish
Directions:
1. Heat a skillet with medium heat.
2. Place bell pepper rings in the heated skillet.
3. Crack egg into bell pepper rings; cook until bottom is solid and corners are slightly darkened, ~2 to 3 minutes.
4. Flip and cook until desired color is reached, after ~2 to 3 minutes more; season with salt and ground black pepper.
