Nidhi's Keto Kitchen: Cilantro Lime Cauliflower Rice

  • Cauliflower 2 lb head

  • Oil 2 tsp

  • Salt 1 ½ tsp

  • Ground pepper powder ½ tsp

  • Fresh lime juice 1 tbsp (1 Lime)

  • Cilantro(Coriander) ¼ cup finely chopped


  1. Cauliflower: To make cauliflower rice, add cauliflower florets to a food processor (not overcrowding it) and process until rice texture. You can use fresh or frozen store-bought just please don’t thaw it.

  2. In a big flat pan add 2 tsp oil add cumin seeds to it. Now add the riced cauliflower (fresh or frozen) and stir it for 2 to 3 mins on high flame.

  3. Now add salt, pepper & fresh lime juice and cilantro and mix everything well. Make sure you don’t overcook it and make it mushy.

  4. Serve it hot with a keto-curry or kebabs.


  • If you are using a frozen cauliflower rice then don’t thaw as it will cook the rice and make it mushy texture when you add them in pan. Just cook for 2 to 3 mins extra in the pan itself.
