Nidhi's Keto Kitchen: Egg Omelet Muffins

  • 1 Spring Onion finely chopped

  • 1 cup Coriander finely chopped

  • 1 cup Mushroom finely chopped

  • ½ cup red bell peppers finely chopped

  • 1 tsp Salt

  • ½ tsp Black pepper powder


  1. Saute the Mushroom in ½ tsp oil

  2. Break 6 eggs in a bowl add salt and pepper and beat it for 1 min.

  3. Add finely chopped spring onions, Coriander, bell peppers and sauteed mushrooms and mix it with spoon.

  4. Spray oil in your Muffin pan

  5. Pour the mixture in the pan. You can make 6 muffins from it.

  6. Do not fill the pan more than 3/4th as it will rise after cooking.

  7. Bake it for 20 mins @350°F.

  8. Remove from the pan and enjoy them hot.
