Keto Lasagna

Ingredients

For the Noodles

- Cooking spray

- 1 (8-oz.) block cream cheese

- 3 large eggs

- 2 cup shredded mozzarella

- ½ cup freshly grated Parmesan

- Kosher salt

- Freshly ground black pepper


For The Filling

- 1 tbsp. extra-virgin olive oil

- ½ medium yellow onion, chopped

- 3 cloves garlic, minced

- 1 tbsp. tomato paste

- 1 lb. ground beef

- Kosher salt

- Freshly ground black pepper

- ¾ cup marinara

- 1 tsp. dried oregano

- Pinch crushed red pepper flakes

- 1 (16-oz.) container ricotta

- 1 ½ cup shredded mozzarella

- ½ cup freshly grated Parmesan

- Freshly chopped parsley, for garnish


Directions

1. Preheat oven to 350°. Line a large baking sheet with parchment and grease with cooking spray.


2. In a microwave-safe bowl, melt cream cheese, mozzarella, and Parmesan together. Add eggs and mix until incorporated. Season with salt and pepper.


3. Spread onto the prepared baking sheet and bake until golden and set, 15 to 20 minutes. Let cool.


4. In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes.


5. Add garlic and cook until fragrant, 1 minute more.
