Ingredients:
Chicken breast
Smoked paprika 1/2 tsp
Garlic powder 1 tsp
Garlic finely chopped 1/2 tsp
Salt 1 tsp
Black pepper powder 1/2 tsp
Italian seasoning 1 tsp
Chicken broth 1/4 cup
Lemon juice 2 tbsp, or one whole lemon
1 tablespoon chopped parsley 1 tbsp
lemon slices for serving optional
Preparation:
For this recipe it is advised to brine chicken for best results. To brine you need lukewarm water with handful of salt, and stir until most of the salt is dissolved. Add chicken breast and let the chicken sit for 15 mins to hours (depending on how much time you have).
Remove the chicken breast and place them on a paper towel and pat dry.
Melt the butter, add all the dry spices (salt, pepper, paprika, garlic salt, italian seasoning), mix them and brush the paste well on both sides of the chicken.
Heat a pan and cook the chicken on high flames, flip until it turns golden brown from both sides. This would take around 5 to 7 mins.
Preheat an oven at 400°F. Transfer the chicken breast in a baking pan, and add lemon juice, chicken broth and garlic. With a spoon pour the mixture on the chicken.
Cook it from 25 mins, the cooking time depending on the thickness of chicken breasts.
Spoon the sauce on the bottom of the baking dish over the chicken, then sprinkle with parsley and serve. Garnish with lemon slices if desired.
Tip:
When I make this recipe I use chicken breasts that are about 1 inch thick. If you use thinner chicken breasts, be sure to decrease the bake time accordingly.
