This spicy filling gave a kick to my taste buds.
Prep time 15 minutes
Eggs whole 2
Mushroom 1/4 cup diced
Green peppers 1/4 cup diced
Onions 1/4 cup diced
Coriander 1/4 cup diced
Green chili finely chopped (optional)
Ham diced 1 tbsp
Cajun Spice 1/8 tsp (optional)
Salt 1/4 tsp
Black pepper powder 1 pinch
Ginger powder 1 pinch
Olive oil 1/2 tsp
In a bowl crack open the eggs and beat them well add 2 pinches of salt.
Heat a big flat pan spray some oil and spread the egg and let it cook, when one side is cooked flip and both sides. Do not make it crisp, it should be easy to fold.
While the eggs are cooking at the same time in a separate pan add olive oil, all the vegetables and all the spices. You need to cook till mushrooms reduce their size and start getting roasted.
Now place the cooked vegetables in the center of the egg and wrap the egg around it as shown in the picture.
Serve it hot with sriracha sauce.
