Nidhi's Keto Kitchen: Garden Fresh Omelette

  • Eggs 2

  • Spinach 1/4 cup

  • Peppers (multi color) 1/4 cup

  • Coriander finely chopped 1 tbsp

  • Diced Mushroom 1/4 cup

  • Salt 1/4 tsp

  • Black pepper powder 1/4 tsp

  • Feta Cheese 1 1/2 tsp (optional)


  1. Break the eggs in a bowl, add salt pepper powder and beat it well.

  2. Heat a pan and spray some oil, add all the cut vegetables and stir them for 3 to 4 mins. the spinach will reduce in size.

  3. Now add the beaten egg on top an cover the pan with a lid.

  4. Add cheese and flip it in half. Cook it through and serve hot with sriracha sauce.
