Spinach 1/4 cup
Peppers (multi color) 1/4 cup
Coriander finely chopped 1 tbsp
Diced Mushroom 1/4 cup
Salt 1/4 tsp
Black pepper powder 1/4 tsp
Feta Cheese 1 1/2 tsp (optional)
Break the eggs in a bowl, add salt pepper powder and beat it well.
Heat a pan and spray some oil, add all the cut vegetables and stir them for 3 to 4 mins. the spinach will reduce in size.
Now add the beaten egg on top an cover the pan with a lid.
Add cheese and flip it in half. Cook it through and serve hot with sriracha sauce.
