Nidhi's Keto Kitchen: Keto Upma

Looking for some keto breakfast options, here is a quick recipe with cauliflower.


Serves 2

Prep time: 20 mins


Ingredients:

  • Cauliflower rice around 3 cups ( just throw the cauliflower florets in the food processor and grate to couscous consistency)

  • Onions 1/2 cup finely chopped

  • Tomato 1/2 cup finely chopped

  • Green chilies finely chopped 1 tbsp (adjust this to your taste)

  • Coriander 1/2 cup finely chopped

  • Olive oil 1 tbsp

  • Mustard seeds 1 tsp

  • Cumin seeds 1/2 tsp

  • Fresh curry Leaves 1

  • Split Black gram (Urad Dhuli Daal) 1 tsp (Optional)

  • Horse gram (Chane ki Daal) 1 tsp (Optional)

  • Salt 1/2 tsp (or to taste)

  • Water 1 cup


Preparation:

  1. Heat a pan and add oil. When the oil gets hot add split black gram and horse gram and cook them for 1 minute, keep stirring continuously.

  2. Add mustard seeds and cumin seeds. When they start to sizzle add green chilies and curry leaves. Cook for a minute and add onions.

  3. Cook till onions become transparent, then add tomato and cook till tomatoes get soft.

  4. Now add riced cauliflower, and salt and stir them to mix all the ingredients.

  5. Add water and coriander mix well, then stir occasionally. After all the water dries serve it hot. You can enjoy some walden farm's ketchup on the side.


Tip:

Fresh cauliflower rice can be replaced with frozen rice too. In that case don't use water as rice would have some water to it already.
