Prep time: 15-20 minutes
Red pepper 1 cut in long slices
Yellow pepper 1 cut in long slices
Green pepper 1 cut in long slices
Red onion 1 cut in long slices
Mushroom 2 cups
Lemon juice 1 tbsp
Garlic 3 to 4 cloves finely chopped
Cilantro finely chopped 1 tbsp
Oil 2 tsp
Chilly Powder 1/4 tsp (you can replace it with any fajita seasoning)
Salt 1/2 tsp
Heat an iron skillet and add oil to it. Add garlic and in 5 to 10 seconds add onion and peppers, and saute for 3 to 4 mins
Now add mushroom and saute for 2 to 3 mins. Add salt and chilli powder. Stir occasionally and don't let the chilly powder burn. Add Lemon juice and turn off the heat.
Garnish with cilantro and serve hot either on a lettuce wrap or as your veggie side.
