Nidhi's Keto Kitchen: Cauliflower Tots

Serves 2-3

Prep Time: 30 mins



  1. Preheat oven to 375°. Grease a large baking sheet with cooking spray or layer it with parchment paper.

  2. Wash and dry the cauliflower, cut the florets and grate them in a food processor to grate them in riced texture.

  3. Microwave the cauliflower rice for 5 mins. Let it cool and strain the cauliflower to let the extra water strain out. (do not throw this water keep it aside for later use if needed). Mash them a little.

  4. Break the egg and whip it to mix the egg yolk and white.

  5. In a bowl add onions, beaten egg, grated or mashed cottage cheese, chives, salt, mashed cauliflower and whey powder. Mix everything well and make a soft dough use the water strained from cauliflower if needed.

  6. Make small rolls of the dough and place them on the baking tray. Place them in a way that none of them touch each other or overlap.

  7. Bake them for 10 mins, flip and cook further 5 to 10 mins till you get the golden color.

  8. Serve them with mint-coriander chutney, refer to my other recipe. Or can serve them with a mix of Walden Farm Ketchup and sriracha.
