Cauliflower 2 lb
Cottage cheese 14 oz
Onions finely chopped 1 cup
Chives 1 tbsp
Salt 1 tsp
Bipro unflavored protein powder 2 scoops (50 gms)
Preheat oven to 375°. Grease a large baking sheet with cooking spray or layer it with parchment paper.
Wash and dry the cauliflower, cut the florets and grate them in a food processor to grate them in riced texture.
Microwave the cauliflower rice for 5 mins. Let it cool and strain the cauliflower to let the extra water strain out. (do not throw this water keep it aside for later use if needed). Mash them a little.
Break the egg and whip it to mix the egg yolk and white.
In a bowl add onions, beaten egg, grated or mashed cottage cheese, chives, salt, mashed cauliflower and whey powder. Mix everything well and make a soft dough use the water strained from cauliflower if needed.
Make small rolls of the dough and place them on the baking tray. Place them in a way that none of them touch each other or overlap.
Bake them for 10 mins, flip and cook further 5 to 10 mins till you get the golden color.
